Hoppel Poppel
If you ever are left thinking you have too many brats to grill, grill them anyway. Save the leftover ones for this classic:
- two leftover brats, sliced crosswise into coin-shaped pieces
- one large onion
- 4 eggs, lightly beaten
- 3 medium yukon gold potatoes
- 2-3 Tbsp butter
- salt and pepper
Microwave the potatoes a few minutes until almost-cooked, but not soft. Chop them up into 1 1/2 chunks. In a frying pan: butter, melted... onions, golden... brats, potatoes, eggs, salt, pepper. Eat.
