Wisconsin Herbed Potatoes
Easy roasted potatoes.
Here's a recipe for an easy side dish of potatoes.
- 4 ½ lbs baby potatoes, mix of red, yellow, and purple, cut into 1 ½ to 2 inch pieces.
- 1 jar (½ cup) of Madison Herb Society's Wisconsin Herb Blend
- 1 Tbsp California Seasoned Pepper
- 2 tsp salt, or whatever seems like enough.
- 1/2 cup vegetable oil
- Set oven to 400º F.
- In a bowl, toss ingredients together, using half of the salt.
- Spread onto two standard jelly roll pans.
- Roast in the oven for 50-60 min, flipping the potatoes (approximately) at the 25 min mark.
- Transfer to a slow cooker set to "warm" if taking to a potluck, otherwise to a serving dish.
- Add salt as needed.
