Easy roasted potatoes.

Wisconsin Herbed Potatoes

Here's a recipe for an easy side dish of potatoes.

  • 4 ½ lbs baby potatoes, mix of red, yellow, and purple, cut into 1 ½ to 2 inch pieces.
  • 1 jar (½ cup) of Madison Herb Society's Wisconsin Herb Blend
  • 1 Tbsp California Seasoned Pepper
  • 2 tsp salt, or whatever seems like enough.
  • 1/2 cup vegetable oil
  1. Set oven to 400º F.
  2. In a bowl, toss ingredients together, using half of the salt.
  3. Spread onto two standard jelly roll pans.
  4. Roast in the oven for 50-60 min, flipping the potatoes (approximately) at the 25 min mark.
  5. Transfer to a slow cooker set to "warm" if taking to a potluck, otherwise to a serving dish.
  6. Add salt as needed.
